Shrimp and Cauliflower Grits

I know you have probably been wondering when I’m going to get around to my health journey, right? Well, here’s a start. I made this Shrimp and Cauliflower Grits the night before last. It was so good. I got the recipe from MyFitnessPal app. The hardest part was grating the cauliflower without a grater. I just chopped it up with a knife as small as I could get it. It worked. It may not have been as small as the recipe wanted it to be, but it worked out for us.

I did mess up and I threw in the shrimp without defrosting them first. Big brain fart on my part. Normally, I would have defrosted the shrimp first, but I didn’t that night. To serve the shrimp part, I just used a slotted spoon to reduce the amount of liquid in the bowl. All-in-all, it came out so delicious! It was 265 calories, 16.3g carbs, and 32.6g protein for a single serving and the recipe makes 4 servings.

I did have fun making this as it is a process making this dish, but it was so worth it. I also made a protein-packed overnight oats bowl for yesterday morning, but I didn’t think to take a picture of that yesterday. I’ll probably make another bowl tonight for tomorrow and try to remember to take a photo. Tonight’s dinner will be Slow Cooker Chicken Tikka Masala.
